Healthy Breakfast Crepes

Ingredients

  • 3/4 cup chickpea flour
  • 3/4 cup GF oat flour
  • 2 cups unsweetened non dairy milk
  • 1 tbsp nut butter
  • 2 tbsp maple syrup
  • 1 ripe banana
  • Pinch sea salt
  • | 1/2 tsp cinnamon
  • 1/2 tsp vanilla
  • Coconut oil - for cooking

Preparation

  1. Put all ingredients in blender and process until smooth

  2. Let sit for 30 min to thicken up

  3. Put a non stick skillet on medium heat

  4. Once hot, add a touch of the batter to test the skillet to ensure they won’t stick and that it’s hot enough

  5. Then for each crepe, scoop 1/3 cup of batter and smooth around a touch with the back of a spoon to desired size

  6. Cook for 2 min on the first side followed by 1 min on the second side

  7. Serve warm with desired fillings

  8. Makes 9 medium sized crepes
