Healthy Breakfast Crepes
Ingredients
- 3/4 cup chickpea flour
- 3/4 cup GF oat flour
- 2 cups unsweetened non dairy milk
- 1 tbsp nut butter
- 2 tbsp maple syrup
- 1 ripe banana
- Pinch sea salt
- | 1/2 tsp cinnamon
- 1/2 tsp vanilla
- Coconut oil - for cooking
Preparation
Put all ingredients in blender and process until smooth
Let sit for 30 min to thicken up
Put a non stick skillet on medium heat
Once hot, add a touch of the batter to test the skillet to ensure they won’t stick and that it’s hot enough
Then for each crepe, scoop 1/3 cup of batter and smooth around a touch with the back of a spoon to desired size
Cook for 2 min on the first side followed by 1 min on the second side
Serve warm with desired fillings
Makes 9 medium sized crepes
