Homemade Vegan and Keto Protein Bars

Ingredients

  • 1 1/2 cup nut butter
  • 3/4 cup protein powder
  • 1/4 cup pure maple syrup
  • 1/2 tsp salt
  • 4 oz vegan dark or vegan white chocolate, optional

  • 1 1/2 cup nut butter
  • 1/2 cup + 1 tbsp protein powder
  • 1/2 tsp salt
  • 1/4 cup + 1/2 tbsp erythritol
  • 4 oz sugar free chocolate chips, optional
  • optional add-ins such as chia seeds, hemp, shredded coconut, Himalayan sea salt

Preparation

  1. Mix all ingredients except chocolate together to form a dough.

  2. Shape the dough into bars with your hands.

  3. If desired, dip or coat the bars in melted chocolate.

  4. Chill the bars to set.

  5. Enjoy your snack!

  6. Prefer vanilla protein powder, but feel free to experiment and adjust sweetener accordingly.
