Pumpkin Mug Cake with Chocolate Chips
Ingredients
- 1 egg
- 1 tbsp pumpkin purée
- 1 tbsp oil
- 1 tbsp maple syrup
- splash vanilla
- 2 tbsp coconut flour
- 1/4 tsp baking soda
- 1/2 tsp pumpkin spice
- pinch salt
- mini chocolate chips (as many as you want)
Preparation
Whisk one egg with 1 tbsp pumpkin purée, 1 tbsp oil, 1 tbsp maple syrup, and a splash of vanilla.
Mix in 2 tbsp coconut flour, 1/4 tsp baking soda, 1/2 tsp pumpkin spice, and a pinch of salt.
Stir in mini chocolate chips to taste.
Microwave for 60-80 seconds until the top looks evenly cooked.
You can mix and cook everything in one mug for simplicity.
