Pumpkin Mug Cake with Chocolate Chips

Ingredients

  • 1 egg
  • 1 tbsp pumpkin purée
  • 1 tbsp oil
  • 1 tbsp maple syrup
  • splash vanilla
  • 2 tbsp coconut flour
  • 1/4 tsp baking soda
  • 1/2 tsp pumpkin spice
  • pinch salt
  • mini chocolate chips (as many as you want)

Preparation

  1. Whisk one egg with 1 tbsp pumpkin purée, 1 tbsp oil, 1 tbsp maple syrup, and a splash of vanilla.

  2. Mix in 2 tbsp coconut flour, 1/4 tsp baking soda, 1/2 tsp pumpkin spice, and a pinch of salt.

  3. Stir in mini chocolate chips to taste.

  4. Microwave for 60-80 seconds until the top looks evenly cooked.

  5. You can mix and cook everything in one mug for simplicity.
