Simple Baked Salmon Balls with Potato and Lemon

Ingredients

  • 2 cups cooked salmon, cold
  • 1 1/2 cups finely grated potato, all the water squeezed out
  • 2 beaten eggs
  • zest of 1 unwaxed lemon
  • 1 tsp salt
  • 2 tbsp finely chopped parsley

Preparation

  1. Mix all the ingredients together until well combined.

  2. Form the mixture into balls.

  3. Preheat oven to 180°C and bake for 30 minutes.

Variations

  1. Add grated courgette, ensuring to squeeze out all the water.

  2. Incorporate chilli, herbs, spring onion, or peas for extra flavor.

  3. For a crunchy coating, coat balls with flour, egg, and breadcrumbs before baking.

  4. Serve with veggie cous cous and sriracha mayonnaise, or enjoy cold.

  5. For wraps, shape the balls flatter for better fit.
