Avocado Pesto Pasta

Ingredients

  • 2 avocados, pitted
  • 3/4 cup cashews, soaked or boiled
  • 1 handful fresh basil
  • 2 cloves garlic
  • 1 lemon, juiced
  • 1 tbsp tahini
  • 1/2 tbsp miso paste of choice
  • 1 cup pasta water
  • a good pinch of salt and pepper
  • 1 box of pasta of choice, (400-500g)

Preparation

  1. Boil pasta in salted water as directed

  2. Meanwhile, in a high speed blender or food processor, blend all other ingredients until smooth adding desired amount of pasta water to thin sauce out

  3. Toss with hot pasta and garnish with pan fried tomatoes (optional)

  4. If you don’t have any soaked cashews one hand, like I have mentioned before, just boil them for a few minutes to soften
