Chia Seed Pancakes

Ingredients

  • 1 & 1/2 cups wholegrain spelt flour
  • 1 tbsp baking powder
  • 1 tsp cinnamon
  • 3 tbsp chia seeds
  • 1 & 1/2 cups almond milk
  • 3 tbsp maple syrup
  • 1 tsp vanilla extract
  • 1 tsp apple cider vinegar

Preparation

  1. Mix all dry ingredients in bowl

  2. Add almond milk, maple syrup, vanilla & then acv then stir until just combined

  3. Let it sit for 10 min so chia can work it’s magic ✨

  4. Cook approx 1/4 cup scoop over med heat in lightly oiled non-stick pan

  5. Flip when bubbles appear in middle of pancake

  6. Cook for another few minutes on the other side

  7. Makes approx 10-12 pancakes, less if thick)

  8. I topped these babies with caramelised banana, berries and a little (?) maple syrup ?
