Chia Seed Pancakes
Ingredients
- 1 & 1/2 cups wholegrain spelt flour
- 1 tbsp baking powder
- 1 tsp cinnamon
- 3 tbsp chia seeds
- 1 & 1/2 cups almond milk
- 3 tbsp maple syrup
- 1 tsp vanilla extract
- 1 tsp apple cider vinegar
Preparation
Mix all dry ingredients in bowl
Add almond milk, maple syrup, vanilla & then acv then stir until just combined
Let it sit for 10 min so chia can work it’s magic ✨
Cook approx 1/4 cup scoop over med heat in lightly oiled non-stick pan
Flip when bubbles appear in middle of pancake
Cook for another few minutes on the other side
Makes approx 10-12 pancakes, less if thick)
I topped these babies with caramelised banana, berries and a little (?) maple syrup ?
