Homemade Falafel Salad with Tahini Dressing
Ingredients
Falafel
- 1 can organic rinsed chickpeas
- 1 bunch parsley
- 5 garlic cloves
- 1 small white onion loosely chopped
- 1 tsp cayenne
- 1 tsp cumin
- 1 tsp salt and pepper
- 1 tbsp lemon juice
- 1 tbsp sesame seeds
- 5 tbsp chickpea flour or other GF flour
Salad components
- spinach
- cucumber
- avocado
- orange bell pepper
Dressing mix
- 3 tbsp tahini
- 1.5 tbsp lemon juice
- 1 tsp salt
- 1 tsp garlic powder
- 1 tsp Dijon mustard
- 1 tsp maple syrup
- 1/4 cup warm water
Preparation
Pulse the chickpeas, parsley, garlic, onion, cayenne, cumin, salt and pepper, and lemon juice in a food processor until blended but not a full purée, as shown in the photos.
Transfer the mixture to a bowl and add sesame seeds and chickpea flour, then mix until you can form a patty without it falling apart; add more flour if needed.
Form the mixture into patties and fry them in a pan with hot oil, such as olive and sesame oil, until crispy on all sides.
Place the fried falafels on a paper towel to absorb excess oil.
For the salad, mix a bunch of greens and vegetables like spinach, cucumber, avocado, and orange bell pepper in a bowl.
Place the fresh falafel patties onto the salad.
For the dressing, mix tahini, lemon juice, salt, garlic powder, Dijon mustard, maple syrup, and warm water in a bowl or container until smooth.
Drizzle the tahini dressing over the salad and falafel, and enjoy.
