Lemon Garlic Shrimp with Cauliflower Rice and Asparagus

Ingredients

  • 1 lb shrimp
  • 1 tbsp ghee
  • 1/2 tsp parsley
  • juice of 1/2 lemon
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • sprinkle of pink Himalayan salt
  • asparagus
  • Trader Joe's everyday seasoning
  • cauliflower rice
  • lemon (for rice)
  • parsley (for rice)

Preparation

  1. Coat 1 lb shrimp with 1 tbsp ghee, 1/2 tsp parsley, juice of 1/2 lemon, 1 tsp garlic powder, 1 tsp onion powder, and a sprinkle of pink Himalayan salt.

  2. Heat a skillet over low to medium heat and cook the shrimp for 7-8 minutes.

  3. Bake asparagus at 400°F for 15 minutes with Trader Joe's everyday seasoning.

  4. Prepare cauliflower rice and season with a little lemon and parsley.
