Lemon Garlic Shrimp with Cauliflower Rice and Asparagus
Ingredients
- 1 lb shrimp
- 1 tbsp ghee
- 1/2 tsp parsley
- juice of 1/2 lemon
- 1 tsp garlic powder
- 1 tsp onion powder
- sprinkle of pink Himalayan salt
- asparagus
- Trader Joe's everyday seasoning
- cauliflower rice
- lemon (for rice)
- parsley (for rice)
Preparation
Coat 1 lb shrimp with 1 tbsp ghee, 1/2 tsp parsley, juice of 1/2 lemon, 1 tsp garlic powder, 1 tsp onion powder, and a sprinkle of pink Himalayan salt.
Heat a skillet over low to medium heat and cook the shrimp for 7-8 minutes.
Bake asparagus at 400°F for 15 minutes with Trader Joe's everyday seasoning.
Prepare cauliflower rice and season with a little lemon and parsley.
