Raw Rich Chocolate Truffles
Ingredients
Chocolate truffle filling
- 3-4 small ripe Avocados
- 1/4 tsp Sea Salt
- 2 tbsp unsweetened Almond Milk
- 1 tsp pure Vanilla Extract
- 4 tbsp pure maple or rice malt syrup
- 4-5 drops of pure stevia
- 1/2 cup raw cacao powder
Chocolate coating
- 1 cup coconut oil (in a liquid consistency)
- 1/2 cup raw cacao powder
- 1/2 cup pure maple or rice malt syrup
Preparation
Blend or process all chocolate filling ingredients together in a high speed blender or food processor.
Using your hands, form the mixture into small balls roughly 1 tablespoon in size and place on a cookie sheet lined with baking paper.
Transfer to the freezer until firm.
While waiting for the balls to firm, make the chocolate coating by whisking all the coating ingredients in a separate bowl until smooth.
Once the truffles have hardened, remove from the freezer and dip each one into the chocolate coating, then place back on the cookie sheet; you can double dip if coating is leftover.
Return to the freezer until the coating has firmed, about 2 hours.
Enjoy 2 straight from the fridge or freezer.
