Raw Rich Chocolate Truffles
Ingredients
Chocolate truffle filling
- 3-4 small ripe Avocados
- 1/4 tsp Sea Salt
- 2 tbsp unsweetened Almond Milk
- 1 tsp pure Vanilla Extract
- 4 tbsp pure maple or rice malt syrup
- 4-5 drops of pure stevia
- 1/2 cup raw cacao powder
Chocolate coating
- 1 cup coconut oil (in a liquid consistency)
- 1/2 cup raw cacao powder
- 1/2 cup pure maple or rice malt syrup
Preparation
Blend or process all chocolate filling ingredients together in a high speed blender or food processor.
Using your hands, form the mixture into small balls and place them on a cookie sheet lined with baking paper.
Transfer the balls to the freezer until they are firm.
While waiting for the balls to firm, make the chocolate coating by whisking all the coating ingredients in a separate bowl until a smooth consistency has been reached.
Once the truffles have hardened, remove them from the freezer and dip each one into the chocolate coating, then place them back on the cookie sheet.
Return the coated truffles to the freezer until the coating has firmed, about 2 hours.
Enjoy straight from the fridge or freezer.
