Vegan Mac and Cheese with Roasted Yams

Ingredients

  • 2 small roasted yams
  • 1 cup nutritional yeast
  • 1/2 cup coconut milk
  • 1/2 cup water
  • A small handful of fresh parsley
  • 4 cloves of garlic
  • 1/4 cup raw, soaked cashews
  • 2 tsp salt
  • Pasta (such as brown rice pasta)
  • Broccoli
  • Onions

Toppings

  • Sprouted grain bread crumbs
  • Chopped parsley
  • Coconut bacon

Preparation

  1. Blend the sauce ingredients until smooth and creamy.

  2. Boil the pasta according to package instructions, using organic brown rice pasta if available.

  3. Chop the broccoli into small pieces.

  4. Caramelize the onions by cooking them slowly until golden brown.

  5. Stir the chopped broccoli and caramelized onions into the sauce and heat on medium until warmed through.

  6. Once the pasta is cooked, drain it and stir it into the sauce mixture.

  7. Serve the dish on a bed of fresh greens.

  8. Top with optional additions like sprouted grain bread crumbs, chopped parsley, or coconut bacon, then enjoy.
