Vegan Mac and Cheese

Ingredients

  • 500 grams macaroni
  • 1 potato
  • 1 carrot
  • broccoli

Sauce blend

  • 6 to 8 tablespoons nutritional yeast
  • 300 ml unsweetened soy milk
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1 1/2 tablespoons arrowroot powder
  • 1/4 teaspoon cayenne pepper
  • 1/2 teaspoon salt

Preparation

  1. Cook the macaroni according to the package directions.

  2. Boil the potato and carrot until soft or to the desired tenderness, then drain and set aside.

  3. Blend all the blended ingredients, including the cooked carrot and cooked potato, until smooth.

  4. Transfer the blended mixture to a medium saucepan and bring it to a boil.

  5. Reduce heat to low, then mix in the cooked macaroni and combine well.

  6. Steam the broccoli with salt, drain the water, and serve it with the mac and cheese while hot.
