Vegan Mac and Cheese

Ingredients

  • 500 grams macaroni
  • 1 potato
  • 1 carrot
  • 6 to 8 tablespoons nutritional yeast
  • 300 ml unsweetened soy milk
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1 1/2 tablespoons arrowroot powder
  • 1/4 teaspoon cayenne pepper
  • 1/2 teaspoon salt
  • broccoli

Preparation

  1. Cook the macaroni according to the package directions.

  2. Boil the potato and carrot until soft or to the desired tenderness, then drain and set aside.

  3. Blend the nutritional yeast, soy milk, garlic powder, onion powder, arrowroot powder, cayenne pepper, salt, cooked carrot, and cooked potato until smooth.

  4. Transfer the blended mixture to a medium saucepan and bring it to a boil.

  5. Reduce the heat to low and mix in the cooked macaroni, combining well.

  6. Steam the broccoli with salt, drain, and serve it with the hot mac and cheese.
