Vegan Mac and Cheese

Ingredients

  • 1/2 pound of dried pasta of choice
  • heaping 1/2 cup raw cashews soaked overnight
  • 1 large carrot, peeled and steamed to soften
  • 1/3 cup nutritional yeast
  • 1/2 cup veggie broth
  • 1 tablespoon of vegan butter, softened
  • 1 tsp salt
  • 1/4 tsp smoked paprika
  • 1/2 tsp of garlic powder
  • 1/4 tsp onion powder

Preparation

  1. Cook the pasta according to package directions until al dente.

  2. In a blender or food processor, combine the soaked cashews, steamed carrot, nutritional yeast, vegetable broth, softened vegan butter, salt, smoked paprika, garlic powder, and onion powder. Blend until smooth and creamy.

  3. Pour the sauce over the cooked pasta and stir to combine. Heat if necessary.
