Vegan Mac and Cheese

Ingredients

  • 500 grams macaroni
  • 1 potato
  • 1 carrot
  • broccoli

Sauce components

  • 6 to 8 tablespoons nutritional yeast
  • 300 ml unsweetened soy milk
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1 1/2 tablespoons arrowroot powder
  • 1/4 teaspoon cayenne pepper
  • 1/2 teaspoon salt

Preparation

  1. Cook the macaroni according to the package directions.

  2. Boil the potato and carrot until soft, drain the water, and set aside.

  3. Blend the nutritional yeast, unsweetened soy milk, garlic powder, onion powder, arrowroot powder, cayenne pepper, salt, cooked carrot, and cooked potato until smooth.

  4. Transfer the blended mixture to a medium saucepan and bring to a boil.

  5. Reduce heat to low, add the cooked macaroni, and mix well.

  6. Steam the broccoli with salt, drain the water, and serve with the mac and cheese while hot.
