Caramel Ice Cream Bars

Ingredients

Base

  • 1/2 cup Crushed Biscuits (I used Biscoff)
  • 1/4 cup Coconut Oil (melted)

Centre

  • 3/4 cup Cashews (soaked)
  • 400ml Coconut Cream
  • 1 scoop Caramel Protein Powder (@macr0mike)
  • 1/2 cup @naturescharm Caramel Sauce

Top

  • 60g Dark Chocolate
  • 1 tsp Coconut Oil

Preparation

  1. Combine crushed biscuits with melted coconut oil in a bowl and press into a lined tin.

  2. Mix soaked cashews with coconut cream in a blender until smooth and pour over the base.

  3. Add dollops of caramel on top of the cream mixture, swirl with a knife, and put in the freezer to set.

  4. Melt chocolate and coconut oil together and pour over the set ice cream.

  5. Cut into slices and store in the freezer.
