Carrot Cake Energy Bites

Ingredients

  • 1 cup dates
  • 1 1/2 cups pecans
  • 1/2 cup shredded carrots
  • 1/3 cup shredded coconut
  • 2 tbsp peanut butter
  • 1/2 tsp vanilla
  • 1/2 tsp cinnamon
  • 1/4 tsp ginger
  • 1/4 tsp nutmeg
  • Sprinkle of salt

Icing

  • 1/2 cup white chocolate chips
  • 1/2 tbsp coconut oil

Preparation

  1. Shred the carrots and pat dry to remove extra moisture.

  2. Add all of the carrot cake ball ingredients into a food processor and pulse until a sticky dough is formed.

  3. Use a cookie dough scoop to scoop out portions of the carrot cake mix.

  4. Form each portion into a ball and place on a plate lined with parchment paper.

  5. Repeat until all dough is used.

  6. In a small bowl, combine the white chocolate chips and coconut oil.

  7. Microwave for 30 seconds, stir, and repeat until melted.

  8. Dip each ball in the icing or drizzle it on top.

  9. Refrigerate the balls for at least 1 hour.

  10. Remove from the fridge and enjoy.

Notes

  1. This recipe makes about 10 carrot cake balls.
