Chocolate Bundt Cake with Blueberry Icing

Ingredients

Cake

  • 1/2 cup plant based butter
  • 1 1/2 cup sugar (coconut could work too!)
  • 3/4 cup cocoa powder
  • 1 cup plant based milk
  • 1 cup warm water/coffee
  • 2 tbsp apple cider vinegar
  • 1 tsp vanilla powder
  • 2 cups flour
  • 1 tsp baking soda
  • 1/2 tsp baking powder

Icing

  • 1 and 1/2 cups icing sugar
  • 3 tablespoon berry puree
  • 1 tbsp milk
  • 1 tsp blue spirulina (optional)

Preparation

Cake

  1. Preheat the oven to 350 and grease your bundt cake mold.

  2. Add apple cider vinegar to milk and set aside for a couple of minutes.

  3. Using an electric handheld beater, mix all your wet ingredients and sugar and beat for 1 minute. Add in your milk mixture and mix again.

  4. Stir in the flour and baking soda slowly. Mix until completely incorporated.

  5. Pour batter into pan and cook for 45 minutes or until middle is cooked.

Icing

  1. Mix until dreamy and lush.
