Chocolate-Dipped Coconut Bounty Bites

Ingredients

  • 1 cup desiccated coconut
  • 2 tablespoons melted coconut oil
  • 3 tablespoons maple syrup
  • 1 tablespoon almond meal
  • 1/2 tablespoon almond milk
  • 1/2 block 70% vegan dark chocolate, melted

Preparation

  1. Melt the coconut oil and syrup together in the microwave.

  2. Place all ingredients in a medium bowl along with the melted coconut oil and syrup and stir well to combine.

  3. Take a round tablespoon and firmly press the mixture into it so the coconut mixture holds its shape.

  4. Use a teaspoon to carefully remove the mixture from the tablespoon onto a dish.

  5. Once you’ve done the whole mixture, place into the freezer for 30 minutes.

  6. Melt the chocolate.

  7. Pick up each coconut ball and coat in the chocolate one at a time.

  8. Top with some shredded coconut and let set.

  1. Coconut is high in saturated fat, so moderation is key.
