Chocolate-Dipped Coconut Bounty Bites
Ingredients
- 1 cup desiccated coconut
- 2 tablespoons melted coconut oil
- 3 tablespoons maple syrup
- 1 tablespoon almond meal
- 1/2 tablespoon almond milk
- 1/2 block 70% vegan dark chocolate, melted
Preparation
Melt the coconut oil and syrup together in the microwave.
Place all ingredients in a medium bowl along with the melted coconut oil and syrup and stir well to combine.
Take a round tablespoon and firmly press the mixture into it so the coconut mixture holds its shape.
Use a teaspoon to carefully remove the mixture from the tablespoon onto a dish.
Once you’ve done the whole mixture, place into the freezer for 30 minutes.
Melt the chocolate.
Pick up each coconut ball and coat in the chocolate one at a time.
Top with some shredded coconut and let set.
Tips
Coconut is high in saturated fat, so moderation is key.
This treat is quick to make and perfect for sweet cravings.
