Fudgy Black Bean Brownies with Protein Boost

Ingredients

  • 1 can black beans (rinsed and drained)
  • 1/2 cup quick oats
  • 2 tbsp cocoa powder
  • 2 tsp vanilla extract
  • 1/4 tsp salt
  • 1/2 tsp baking powder
  • 1/2 cup maple syrup
  • 1/4 cup almond butter (Use a nut butter that is runny. I used Trader Joe's raw almond butter which is perfectly runny and wouldn't strongly effect the flavor of the brownies.)
  • 1/3 cup chocolate chips

Preparation

  1. Set oven to 350F.

  2. Place all dry ingredients except beans and chocolate chips into a food processor. Process on high until oats are a fine flour.

  3. Add in all liquid ingredients and black beans to food processor and continue to process until a smooth batter forms. Scrape down sides to ensure even mixing.

  4. Add in chocolate chips and fold in with a spatula (do not process).

  5. Spoon mixture into an 8x8 baking pan and add additional toppings or swirl in extra nut butter if desired.

  6. Bake brownies for 20 minutes.

  7. Remove from oven and allow to cool before cutting. They are perfect when warm and melty.
