Paleo Spice Cake

Ingredients

  • Preheat oven to 350F
  • In a bowl, whisk 4 eggs
  • Then add in
  • 3/4 cup coconut flour
  • 3/4 cup full fat coconut milk
  • 1/3 cup maple syrup
  • 1/4 cup coconut oil (melted)
  • 1 tsp baking powder
  • 2 tsp cinnamon
  • 1 tsp ginger
  • 1/2 tsp all spice
  • 2 tsp vanilla extract
  • 1/2 tsp nutmeg

Preparation

  1. Mix everything together, line a cake pan with parchment paper (I used an 9x7), pour batter in. Bake for 30-33 mins (use a toothpick to see if it’s done)

  2. Let cool before removing from pan

  3. Icing: 1/2 cup coconut butter + 1/2 cup maple syrup. Melt 30 seconds, stir, and add in a splash of almond milk. Add once the cake is cooked and topped with chopped pecans
