Rhubarb Strawberry Tiramisu in Dessert Glasses
Ingredients
Rhubarb filling
- 300 g rhubarb
- 200 g strawberries
- 1 packet bourbon vanilla sugar
- 1 tablespoon sugar
- 2 tablespoons amaretto
Cream
- 100-150 g ladyfingers
- 2 egg yolks
- 80 g powdered sugar
- a pinch of salt
- 500 g mascarpone
- cocoa powder for dusting
- 3 strawberries, halved
Preparation
Prepare six 200ml dessert glasses.
Wash, peel, and cut rhubarb into small pieces.
Wash strawberries and set aside 3-4 for decoration.
Cut the remaining strawberries into small cubes.
Bring rhubarb, vanilla sugar, sugar, amaretto, and 1 tablespoon water to a boil in a pot.
Simmer for about 7-8 minutes over medium heat.
Add the strawberry pieces and simmer for 1 more minute.
Let cool slightly.
Cut ladyfingers to fit the glasses and distribute half of them into six glasses.
Beat egg yolks with powdered sugar and salt until foamy.
Gently fold in mascarpone with a whisk.
Fill the cream into a piping bag with a large tip.
Spread half of the fruit puree over the ladyfingers and smooth.
Pipe half of the cream on top.
Add the remaining ladyfingers and press down slightly.
Spread the remaining fruit puree on top.
Pipe the remaining cream on top to form a small dome.
Chill.
Just before serving, dust the tiramisu with cocoa powder and garnish with halved strawberries if desired.
