Barberry Rice with Chicken

Ingredients

  • Chicken thighs
  • 2 onions
  • Butter
  • Saffron
  • Black pepper
  • Salt
  • 1 glass water
  • 1-2 tablespoons tomato paste
  • Optional: 1 tablespoon lemon juice
  • Rice
  • Barberries
  • 1 tablespoon sugar

Preparation

  1. Cut the chicken thighs into top and bottom pieces and place in water over heat, skim off foam when it boils and wash thoroughly

  2. Fry the chicken thighs with butter and one cup of saffron water

  3. In a pot, chop two onions into julienne strips and fry with butter and some oil until lightly cooked

  4. Add the chicken thighs to the onions, then add saffron, black pepper, and salt, fry briefly

  5. Add one glass of water and let it cook, then fry 1-2 tablespoons of tomato paste in oil and add to the chicken, allow it to incorporate and cook until the sauce thickens

  6. Optionally add one tablespoon of lemon juice for better flavor

  7. Prepare the rice by steaming or cooking as kateh

  8. Fry the barberries with butter, one tablespoon of sugar, and one cup of saffron

  9. Garnish the rice with saffron and barberries before serving

Tips

  1. Adding lemon juice can enhance the flavor of the chicken
