Akbar Jojeh Persian Chicken Dish

Ingredients

  • 1.5 kg chicken
  • 2 tablespoons salt for marinating
  • 1 cup oil
  • 100 grams butter (optional)
  • 1/2 cup saffron-infused water
  • 1/2 cup pomegranate paste
  • 1/2 cup ground walnuts

Preparation

  1. Cut the chicken into pieces

  2. Marinate the chicken with salt

  3. Heat oil in a pan

  4. Add butter if using, then add saffron-infused water to keep the temperature lower

  5. Cook the chicken in the pan until browned

  6. Stir in pomegranate paste and ground walnuts

  7. Continue cooking until the sauce thickens and chicken is fully cooked

Tips

  1. Use moist chicken for best results

  2. Butter is optional and can be omitted

  3. Saffron should be added when the oil is not too hot to prevent bitterness
