Shrimp and Rice Pilaf
Ingredients
- 4 cups rice
- 2 large chopped onions
- 6 cloves crushed garlic
- 1/4 cup corn oil
- 250 grams medium-sized shrimp
- 1 tablespoon cumin
- 2 teaspoons salt
- 1/4 teaspoon black pepper
- 5 cups water or broth

Preparation
Wash the rice several times and soak it for 30 minutes.
In a deep pot, add the oil and place it on medium heat. Add the onion and stir until it becomes light golden. Then add the garlic and stir until it becomes golden.
Continue stirring the onion until it becomes very dark golden, but do not let it burn and change taste.
Add the shrimp to the onion and stir until it becomes light golden.
Add the cumin, salt, and pepper.
Drain the rice and add it to the shrimp. Stir the rice for a few seconds to absorb the onion flavor.
Add the water or broth. Bring to a boil on high heat until holes form on the surface, then reduce the heat and cover the pot.
Cook the rice on very low heat for 25 minutes or until it is done.
