Berry Oat Parfait with Chocolate Shell

Ingredients

  • 40g quick oats
  • 50g mixed frozen berries
  • 10 chia seeds
  • 200g soy milk
  • 1 tbsp maple syrup
  • a splash of vanilla

Toppings

  • 20g dark chocolate
  • 4 strawberries
  • a few spoonfuls of nut butter

Preparation

  1. Mix all ingredients except for the toppings in a bowl and place in the fridge to soak for a minimum of 2 hours, but ideally overnight.

  2. Give it another stir once soaked to ensure all the berries are thawed and evenly distributed throughout the oats.

  3. Layer in a jar with nut butter and chopped strawberries.

  4. Melt 20g chocolate either by microwaving in 10-second intervals or over a pot of boiling water and carefully drizzle or spread out on top.

  5. Place back in the fridge until hardened and add any other toppings you might want.

  6. Crack into it and enjoy!
