Butter Beans Cooked in Tomato Sauce

Ingredients

  • 1 tin butter beans
  • 1 tin of chopped tomatoes
  • 2 stalks of celery
  • 1/2 a red onion
  • 3 cloves of garlic
  • 1/2 tsp marmite
  • 1 tsp smoked paprika
  • 1/2 tsp of cumin
  • 1 tsp of sugar
  • 1 tbsp chopped parsley

Preparation

  1. Slice the onion into thin half moons, dice the garlic & the celery

  2. Heat a large pan and begin to sauté the onions until starting to brown, about 5-7 mins

  3. Add in the celery and cook for another 4/5 mins

  4. Add in the garlic and cook for 1 min

  5. Pour in the tomatoes, fill the can up with water and add that too

  6. Pour in the butter beans, add the marmite & sugar

  7. Check for seasoning

  8. Bring to a bubble and then leave to simmer for 20 mins or so until lovely and thick

  9. Sprinkle over fresh parsley

  10. Serve on toast lathered in butter
