Chili Crisp Chicken Fresh Spring Rolls
Ingredients
- 1 cup chicken
- 1-2 tbsp chili crisp
- 1 tbsp scallions
- 1/2 tsp sugar of choice
- Pinch of garlic powder
- Vietnamese rice paper
- Butter lettuce
- Cabbage
- Carrots
- Cucumber
- Seaweed or nori
Peanut sauce
- 1/2 cup peanut butter
- 1-2 tbsp sriracha
- 1 tsp rice vinegar
- 2 tsp sesame oil
- 4-5 tbsp tamari or soy sauce
- 1 tbsp sugar of choice
- 2-3 tbsp lime juice
- 1 garlic clove or garlic powder
- 1/4 tsp ginger powder
- Pinch of black pepper
- 2-3 tbsp water
Preparation
Mix the chicken, chili crisp, scallions, sugar, and garlic powder together in a bowl.
Combine the peanut sauce ingredients and stir or blend until smooth.
Soak the rice paper in water until it becomes pliable.
Assemble the spring rolls by placing the vegetables and chicken mixture on the rice paper and rolling it tightly.
Serve the spring rolls with the peanut sauce and seaweed.
Tips
Adjust the sugar in the chicken mixture based on your preference.
Add water to the peanut sauce slowly to reach the desired consistency and adjust soy sauce or sugar as needed.
