Creamy Dairy-Free Vodka-Style Pasta

Ingredients

  • 1/4 cup cashews
  • 1/4 cup non-dairy milk
  • jarred tomato sauce
  • pasta

Optional vegetables

  • cauliflower
  • broccoli
  • asparagus

Preparation

  1. Boil 1/4 cup of cashews for 30 minutes.

  2. Blend the boiled cashews with 1/4 cup of non-dairy milk.

  3. Cook pasta according to package instructions.

  4. Add the blended mixture to your favorite jarred tomato sauce.

  5. Serve the sauce over the cooked pasta.

Optional additions

  1. Steam cauliflower, broccoli, or asparagus and add to the dish for extra vegetables.
