Easy Brazilian Chicken FricassΓ©e Pie

Ingredients

Dough

  • 250 grams rice flour
  • 100 grams unsalted butter
  • 55 ml cold water
  • generous pinch of salt

Filling

  • 1 cooked and shredded chicken breast
  • 400 ml sugar-free tomato sauce
  • 1 large onion
  • 2 garlic cloves
  • 200 grams light cream cheese
  • chopped parsley to taste
  • pinch of salt
  • 1 can of corn

Assembly

  • 1 egg yolk

Preparation

  1. Mix all the dough ingredients by hand until uniform and not sticky, then refrigerate.

  2. Chop the garlic and onion and brown them over low heat.

  3. Add the tomato sauce and cream cheese to the pan and mix well.

  4. Add the shredded chicken and a pinch of salt, and stir until everything is incorporated.

  5. Add the chopped parsley and corn, mix thoroughly, and let the filling cool.

  6. Divide the dough into two parts.

  7. Sprinkle rice flour on the counter and roll out half the dough.

  8. Place the dough in a removable bottom pan, pressing it into the bottom and sides.

  9. Add the filling to the pan.

  10. Roll out the remaining dough and cover the pie.

  11. Brush the top with egg yolk.

  12. Bake in a preheated oven at 180Β°C for about 50 minutes.
