Creamy Chicken Pie Made in Blender
Ingredients
Crust
- 200 ml whole or plant-based milk
- 1/2 cup coconut oil or melted butter
- 3 eggs
- 1 1/2 cups oat flour or rice flour
- 1 generous pinch of salt
- 1 tablespoon baking powder
- 50 grams grated parmesan cheese
Filling
- 1 cooked and shredded chicken breast
- 1 chopped onion
- 2 chopped garlic cloves
- Seasonings to taste
- 200 ml tomato sauce
- 200 grams creamy cheese spread
- 1 can corn
- Chopped parsley to taste
- 1 pinch of salt
Preparation
Crust
Blend all crust ingredients except grated parmesan and baking powder in a blender until smooth
Add baking powder and mix gently with a spoon
Add grated parmesan and mix gently
Filling
SautΓ© garlic and onion in olive oil until golden
Add shredded chicken and seasonings, stirring well
Add tomato sauce and 100 grams of creamy cheese spread, stirring well
Add corn and parsley, and cook until the sauce reduces slightly
Set aside to cool
Assembly
Grease a square baking dish
Pour half of the crust mixture into the dish
Spread the chicken filling over the crust
Place the remaining 100 grams of creamy cheese spread on top of the filling
Cover with the remaining crust mixture
Sprinkle grated parmesan cheese on top
Bake in a preheated oven at 180Β°C for 40 minutes, or until golden and set
