Creamy Chicken and Cheese Blender Casserole
Ingredients
Filling
- 1 cooked and shredded chicken breast
- 1 chopped onion
- 2 chopped garlic cloves
- Seasonings to taste
- 200 ml tomato sauce
- 200 grams cream cheese
- 1 can corn
- Chopped parsley to taste
- A pinch of salt
- 100 grams shredded mozzarella cheese
Batter
- 200 ml whole milk or plant-based milk
- 1/2 cup coconut oil or melted butter
- 3 eggs
- 1 1/2 cups oat flour or rice flour
- A generous pinch of salt
- 1 tablespoon baking powder
- 50 grams grated parmesan cheese
Preparation
Filling
SautΓ© the garlic and onion with a drizzle of olive oil
Add the chicken, mozzarella cheese, and seasonings and stir well
Add the tomato sauce and 100 grams of cream cheese and stir well
Add the corn and parsley and stir well until the sauce reduces a little then set aside
Batter
Blend all ingredients in the blender except the grated parmesan cheese and baking powder
After blending the batter well add the baking powder and mix with a spoon
Assembly
Grease a square baking dish and pour half of the batter
Add all the chicken filling
Place the remaining 100 grams of cream cheese on top
Cover with more batter
Finish with grated parmesan cheese and bake in a preheated oven at 180 degrees for 40 minutes
