Fresh Spinach and Ricotta Spread

Ingredients

  • 150 g fresh spinach
  • 120 g ricotta
  • 150 g low-fat quark
  • 1 teaspoon lemon juice
  • 1 clove garlic
  • Salt
  • Pepper

Preparation

  1. Put spinach leaves in a bowl and pour boiling water over them, then immediately drain the water.

  2. Mix the spinach with ricotta, quark, and lemon juice; if the spinach leaves are too large, chop them before adding.

  3. Add garlic, salt, and pepper to the mixture.

Storage and tips

  1. The spread can be stored in the refrigerator for up to 3 days.

  2. Serve it with whole grain bread or fresh vegetables as a dip.
