Gluten-Free French Onion Soup

Ingredients

  • 45g butter (3 tbsp) or 2 tbsp olive oil
  • 3 large onions
  • 8 cups water
  • 4 or 5 bouillon cubes (McCormick's is GF)
  • 1 tsp gluten-free tamari or soy sauce
  • 1 cup grated mozzarella cheese
  • Gluten-free sourdough bread slices

Preparation

  1. In a pan melt the butter and add in the onions, cooking on medium to low heat for about 10 to 12 minutes until they are transparent and lightly browned.

  2. In a medium saucepan combine beef bouillon cubes, sautéed onion, tamari sauce and bring to a boil.

  3. Reduce the heat and simmer for 30 to 40 minutes.

  4. Toast some gluten-free sourdough bread until crispy.

  5. Pour the French onion soup into oven-proof soup bowls and float the toast on top of the soup.

  6. Sprinkle lots of cheese on top of the toast.

  7. Broil in the oven until the cheese bubbles and is slightly browned.

Notes

  1. This recipe makes 4 servings and uses gluten-free sourdough bread to prevent it from becoming mushy.
