Javanese Sweet Braised Eggs
Ingredients
- 3 tablespoons cooking oil
- 2 cm galangal, bruised
- 2 bay leaves
- 150 grams palm sugar, grated
- 400 ml water
- 8 boiled eggs
- fried shallots, for sprinkling
Spice mix
- 8 shallots
- 5 garlic cloves
- 1 tablespoon coriander seeds
- 3 roasted candlenuts
- 1 teaspoon salt
- 1/2 teaspoon chicken bouillon powder
Preparation
Heat cooking oil in a pan or pot, sauté the ground spice mix with galangal and bay leaves until fragrant.
Add palm sugar and water, cook until boiling and sugar dissolves.
Add boiled eggs, stir. Cook until spices are absorbed and water reduces. Remove from heat.
Serve with a sprinkle of fried shallots.
