Eggs in Spicy Tamarind Sauce
Ingredients
- 10 eggs
- Cooking oil as needed for sautéing
Spice paste
- 10 red chilies
- 7 bird's eye chilies
- 7 shallots
- 3 cloves garlic
- 1/2 teaspoon shrimp paste
- 1 stalk lemongrass (white part, bruised)
- 2 bay leaves
- 3 kaffir lime leaves, torn
- 1 piece ginger, bruised
- 2 tablespoons tamarind juice
- Salt to taste
- Sugar to taste
- 100 ml water
- 7 whole bird's eye chilies
Preparation
Boil the eggs until cooked, peel them and fry briefly, then set aside.
Sauté the spice paste until fragrant, add lemongrass, bay leaves, kaffir lime leaves, and ginger, and cook until mature. Add tamarind juice, salt, and sugar, then pour in water and let it boil until the liquid reduces.
Add the fried eggs and whole bird's eye chilies, cook until the spices are fully absorbed, and serve.
