Maple Bbq Chicken Tenders

Ingredients

  • 2 chicken breasts
  • 2 large eggs
  • 2 tablespoons pickle juice (or pickled jalapeño juice)
  • 2 cups all-purpose flour
  • 2 cups breadcrumbs
  • 2 tablespoons smoked paprika
  • 1 tablespoon garlic powder
  • 1 1/2 teaspoons onion powder
  • 1 1/2 teaspoon cayenne pepper
  • Kosher salt, to taste
  • Parsley flakes (optional, for garnish)
  • Cooking spray

Spicy maple bbq sauce

  • 1/2 cup maple syrup
  • 1/4 cup BBQ sauce
  • Sriracha, to taste
  • Chili flakes, to taste

Preparation

  1. Cut each chicken breast into 3 even strips. In a shallow bowl, whisk the eggs with pickle juice.

  2. In one bowl, combine flour with smoked paprika, garlic powder, onion powder, cayenne, and salt. In another, add breadcrumbs and optionally mix in a pinch of parsley flakes if using.

  3. Dip each strip into the egg wash, then dredge in the seasoned flour. Shake off excess, dip again in the egg wash, then coat in breadcrumbs, pressing gently to adhere.

  4. Place tenders in a preheated air fryer basket. Lightly spray with cooking spray. Air fry at 400°F for 10 minutes, flipping halfway through, or until golden and internal temperature reaches 165°F.

  5. In a small saucepan or bowl, whisk together maple syrup, BBQ sauce, sriracha, and chili flakes until smooth and heated if desired.

  6. Once the tenders are cooked, toss them in the spicy maple BBQ sauce. Serve hot with extra sauce on the side.
