Quick and Easy Microwave Hummus
Ingredients
- 1 can chickpeas with liquid
- 4 whole garlic cloves
- Juice of 1/2 to 1 lemon
- 1/4 to 1/2 cup tahini
- Salt and pepper to taste
- Splash of olive oil
- Reserved chickpea liquid (approximately 1/3 cup)
Preparation
In a mixing bowl, combine 1 can of chickpeas with its liquid and 4 whole garlic cloves, then microwave for 4-5 minutes.
Transfer the mixture to a food processor. Add juice from 1/2 to 1 lemon, 1/4 to 1/2 cup tahini, salt, pepper, and a splash of olive oil while blending.
Process until smooth and creamy, scraping down the sides as needed. Add reserved chickpea liquid to achieve desired creaminess, such as 2 tablespoons more.
Taste and add more salt or other seasonings as preferred.
Serve with sliced vegetables like cucumber and tomatoes, or pita chips. Store leftovers in the refrigerator for up to one week; flavors improve after chilling.
