Raw Creamy Chocolate Chip Ice Cream Sandwich

Ingredients

  • 2-3 tablespoons gluten-free flour
  • 2 small bananas
  • 1 tablespoon raw cacao nibs or vegan dark chocolate chips
  • 2 frozen bananas
  • 1 tablespoon almond milk
  • 1/2 teaspoon vanilla extract or vanilla bean powder

Preparation

  1. Mash the 2 small bananas until smooth to create a puree.

  3. Shape the dough into small cookies and set aside.

  4. Blend the 2 frozen bananas with 1 tablespoon of almond milk and 1/2 teaspoon of vanilla extract until creamy to make the ice cream.

  5. Assemble the sandwiches by placing a scoop of the banana ice cream between two cookies and pressing together gently.
