Refreshing Cucumber and Kiwi Salad
Ingredients
- Cos lettuce - 1 large bunch coarsely chopped
- Cherry tomatoes - 1 cup
- Telegraph cucumber - 1/2
- Kiwi fruit - 2
Dressing
- Olive oil - 4 tbsp
- Basil leaves - 1/4 cup chopped
- Salt - according to your taste
- Black pepper - 1/2 tsp
- Apple cider vinegar - 1 tbsp
Preparation
In a large bowl, add all the salad ingredients in order as listed, after washing, chopping the lettuce, cucumber, and tomatoes, and slicing the kiwi fruit.
For the dressing, add all dressing ingredients to a bowl and mix well with the chopped basil.
You can use a muddler to release the basil flavors into the dressing mixture.
Pour the dressing mixture over the salad, mix well, and serve.
Check salt and pepper according to your taste.
