Simple One Pot Curry Noodles
Ingredients
- one small diced onion
- 3 minced garlic cloves
- 1/2 tablespoon minced ginger
- 1 diced jalapeño
- 3 tablespoons curry paste
- sprinkle of salt and pepper
- 1 can coconut milk
- 1 cup broth
- 8 ounces dry noodles
- 1 small head of chopped broccoli
Preparation
Sauté one small diced onion in a large skillet or pot for 4 minutes.
Add 3 minced garlic cloves, 1/2 tablespoon minced ginger, and 1 diced jalapeño; cook for another minute.
Add 3 tablespoons curry paste and a sprinkle of salt and pepper.
Add 1 can coconut milk, 1 cup broth, and 8 ounces dry noodles; cover and cook for 5 minutes.
Add 1 small head of chopped broccoli; cover and cook for another 6 minutes.
