Simple One Pot Curry Noodles

Ingredients

  • one small diced onion
  • 3 minced garlic cloves
  • 1/2 tablespoon minced ginger
  • 1 diced jalapeño
  • 3 tablespoons curry paste

  • 1 can coconut milk
  • 1 cup broth
  • 8 ounces dry noodles
  • 1 small head of chopped broccoli

Preparation

  1. Sauté one small diced onion in a large skillet or pot for 4 minutes.

  2. Add 3 minced garlic cloves, 1/2 tablespoon minced ginger, and 1 diced jalapeño; cook for another minute.

  3. Add 3 tablespoons curry paste and a sprinkle of salt and pepper.

  4. Add 1 can coconut milk, 1 cup broth, and 8 ounces dry noodles; cover and cook for 5 minutes.

  5. Add 1 small head of chopped broccoli; cover and cook for another 6 minutes.
