Stuffed Potatoes with Tomato Sauce

Ingredients

  • 8 medium potatoes
  • 2 tablespoons oil
  • 500 grams ground meat
  • 1 large chopped onion
  • 4 crushed garlic cloves
  • 1 teaspoon mixed spices
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon turmeric
  • 1/4 cup chopped parsley
  • 1/4 cup fried pine nuts
  • 4 large quartered tomatoes
  • 2 cups broth or water
  • 1 teaspoon dried mint

Preparation

  1. In a deep bowl, place a generous amount of water and add a tablespoon of salt.

  2. Using a vegetable peeler, peel the potatoes.

  3. Using a corer, hollow out the potatoes and place them in the salted water. Let them sit until the meat is prepared.

  4. In a medium-sized pot, place the oil and heat it on medium heat.

  5. Add the meat to the oil and stir until it turns brown and dries completely.

  6. Add the onion, garlic, spices, salt, pepper, and turmeric. Stir until the onion softens completely.

  7. Pour the meat mixture into a wide plate. Add parsley and pine nuts and stir to mix.

  8. Distribute the meat mixture into the potato pieces to fill them well.

  9. Bring a short-rimmed medium-sized pot and place the stuffed potatoes in it.

  10. In a blender jug, place the tomatoes, broth, and mint. Blend on medium speed until smooth and pour the sauce over the potatoes.

  11. Place the pot on medium heat for the sauce to boil. Cover the pot, reduce the heat, and let the potatoes cook for about half an hour or until fully cooked.

  12. Serve the stuffed potatoes with white rice.
