Tater Tot Breakfast Casserole
Ingredients
- 1 cup chopped onions
- 1 cup chopped bell peppers (I used a frozen blend)
- 2 cloves minced garlic
- 6 chopped breakfast sausage patties (I used Beyond Meat)
- 1 1/4 cups shredded vegan cheddar cheese (I like Violife and Follow Your Heart)
- 1 bottle Just Egg
- 15 oz frozen tater tots
- Salt and pepper to taste
- 2 tsp butter for greasing baking dish
- 2 tsp chopped parsley for garnish
Preparation
Sauté the onion and peppers until the onions are translucent. Add the garlic and cook until fragrant.
Slightly thaw the breakfast sausage patties before chopping and add them to the onion and peppers. Cook for a few minutes until sausages are just cooked.
Pour the onion, sausage and pepper mixture into a lightly buttered baking dish.
Pour the Just Egg over the entire mixture, season with salt and pepper, and sprinkle the shredded cheese over everything.
Layer the frozen tater tots to cover the top and bake at 375°F for 40 to 50 minutes or until the tots are golden brown and the egg is cooked (it should only slightly wiggle if at all).
