Creamy Vegan Mushroom Soup
Ingredients
- 1 tbsp olive oil
- 1 medium onion, diced
- 2 cloves garlic, minced
- 200g mushrooms, sliced
- 2 cups vegetable broth
- 1 cup unsweetened almond milk
- 1 tbsp nutritional yeast
- Salt and pepper, to taste
- Fresh parsley, for garnish
Preparation
Heat olive oil in a pot over medium heat
Add diced onion and minced garlic and sauté until softened
Add sliced mushrooms and cook until browned
Pour in vegetable broth and unsweetened almond milk
Stir in nutritional yeast and bring to a simmer
Season with salt and pepper to taste
Cook until heated through and slightly thickened
Garnish with fresh parsley and serve immediately
