Chocolate Coated Fig and Nut Bars
Ingredients
- 1/4 cup sunflower seeds
- 3/4 cup whole raw almonds
- 2 tbsp chia seeds
- 3/4 cups dried cranberries
- 2 tbsp coconut oil
- 1 cup California figs, stemmed and chopped
- 1/2 tsp pumpkin spice (for sprinkling too)

Preparation
Line 9-inch square baking dish with parchment paper
Process all ingredients in food processor until finely ground. Transfer mixture to baking dish spread into even layer, pressing down using spatula or hand to firmly compress. Transfer to refrigerator and chill until mixture is firm, about 20 minutes.
Lift parchment paper out of baking dish and place on cutting board. Using a sharp knife cut them into bars.
Begin to melt your chocolate over stove top. Once fully melted dip the fig bars in and finish with a sprinkle of pumpkin spice. Pop back into the freezer to chill chocolate layer.
Store in fridge or freezer. Enjoy!
