Pumpkin Spice No-Bake Bites

Ingredients

  • 2 green tipped bananas
  • 3 tbsp coconut oil
  • 1 1/2 tbsp pumpkin pie spice
  • 3 tbsp cashew butter
  • 2 tbsp cassava flour

Preparation

  1. Add all ingredients into a food processor or high speed blender. Process until smooth

  2. Pour batter into a bowl and freeze for 10-15 minutes or until batter is thick

  3. For rolling: 1/4 cupped nuts, 1 1/2 tbsp pumpkin pie spice

  4. Use a small batter scooper to scoop equally-size bites and roll in the nut/spice mix

  5. Refrigerate leftovers if not consumed immediately
