Classic Brazilian Lemon Pie
Ingredients
- 1 package cornstarch biscuits
- 3 limes
- 2 tablespoons margarine
- 1 can sweetened condensed milk
Preparation
Crust
Crush the biscuits in a blender and place in a bowl
Add the margarine and knead by hand until the mixture can be molded
Press the dough into a removable-bottom pie pan, covering the bottom and sides
Bake in a preheated oven at high heat for 10 minutes to brown the crust, then set aside
Filling
Place the sweetened condensed milk in a bowl
Gradually add lime juice to taste, depending on whether you prefer it more tart or sweeter
Pour the filling over the cooled crust
Sprinkle lime zest over the filling
Refrigerate for about 2 hours, then unmold and serve
