Easy No-Bake Brownies

Ingredients

  • 1 cup (93g) oats
  • 1/2 cup (43g) walnuts
  • 1/4 cup (22g) dutch-processed cocoa powder (or sun regular)
  • 1/4 tsp cinnamon
  • Pinch of sea salt
  • 1/4 cup (66g) cashew butter (or sub other nut butter)
  • 5 pitted, medjool dates
  • 1/4 cup (47g) melted coconut oil
  • 2 tbsp maple syrup

Preparation

  1. Line a loaf tin with parchment paper.

  2. In a food processor, process oats, walnuts, cocoa powder, cinnamon, and salt until a coarse flour forms.

  3. Add the rest of the ingredients and pulse until a dough starts to come together.

  4. You’ll be able to press the mixture between your fingers.

  5. Press the dough into the loaf tin in an even layer.

  6. Sprinkle flaky sea salt on top.

  7. Place in the fridge to set for 15 minutes.
