Pumpkin Spice Protein Bliss Balls

Ingredients

  • 1/2 cup pumpkin puree
  • 1 cup rolled oats
  • 1/3 cup sunflower seed butter (can sub with any natural nut or seed butter of your choice)
  • 1/2 tsp cinnamon
  • 1/4 tsp ground ginger
  • 1/4 tsp cloves
  • 1/4 tsp nutmeg
  • 1/4 cup ground flax
  • 2 scoops vanilla protein powder (brown rice or hemp)

Preparation

  1. Mix all dry ingredients in a small mixing bowl.

  2. In a separate medium-sized bowl, combine pumpkin puree and nut butter.

  3. Add dry ingredients to wet, and lightly mix until well-combined.

  4. Using a tablespoon to portion, roll into 2-inch size balls and place on a non-stick baking tray or large flat plate or tray lined with parchment paper.

  5. Place balls into fridge for 15-20 minutes to set before eating.

Storage

  1. Keep stored in fridge in an airtight container up to 4 days, or in the freezer for up to 4 months.

  2. This recipe makes 12 snack-sized bites.

Notes

  1. This recipe is low sugar and high in protein. Pumpkin is a low carb veggie rich in Vitamin A, antioxidants, and fiber.
