Cajun Chicken Sausage Pasta

Ingredients

  • Olive oil
  • 1 package of 4-5 chicken sausages
  • 2 cups kale
  • 1 15 ounce can fire roasted diced tomatoes
  • 1 15 ounce can full fat coconut milk
  • 1/3 cup nutritional yeast
  • 1 1/2 tsp garlic powder
  • 1 1/2 tbsp Cajun seasoning of choice
  • 3 cups pasta of choice
  • salt to taste

Preparation

  1. Heat a large skillet over medium heat.

  2. Add olive oil and the chicken sausage cut into about 1/2 inch pieces.

  3. Cook until the chicken sausage is a little browned on each side; this will vary based on the thickness.

  4. Remove and set aside.

  5. In a pot, cook your pasta.

  6. Add kale, tomatoes, chicken sausage, garlic, and Cajun seasoning to the same pan and stir everything together.

  7. Sauté for 3-4 minutes.

  8. Add coconut milk, nutritional yeast, and cooked pasta rinsed and drained.

  9. Stir together and bring to a low boil, then reduce to a simmer and let it simmer for 3-4 minutes, stirring well.

  10. Remove from heat and enjoy.
