Cajun Chicken Sausage Pasta
Ingredients
- Olive oil
- 1 package of 4-5 chicken sausages
- 2 cups kale
- 1 15 ounce can fire roasted diced tomatoes
- 1 15 ounce can full fat coconut milk
- 1/3 cup nutritional yeast
- 1 1/2 tsp garlic powder
- 1 1/2 tbsp Cajun seasoning of choice
- 3 cups pasta of choice
- salt to taste
Preparation
Heat a large skillet over medium heat.
Add olive oil and the chicken sausage cut into about 1/2 inch pieces.
Cook until the chicken sausage is a little browned on each side; this will vary based on the thickness.
Remove and set aside.
In a pot, cook your pasta.
Add kale, tomatoes, chicken sausage, garlic, and Cajun seasoning to the same pan and stir everything together.
Sauté for 3-4 minutes.
Add coconut milk, nutritional yeast, and cooked pasta rinsed and drained.
Stir together and bring to a low boil, then reduce to a simmer and let it simmer for 3-4 minutes, stirring well.
Remove from heat and enjoy.
